Why the shelf runs salty
Salt is how jerky works; no honest brand claims otherwise. But mass-market jerky leans on heavy brines and sweeteners to cover for chopped-and-pressed meat, which is the brand's explanation for why those panels read 520 and 600. Whole-muscle cuts, smoked slow in small batches, need less help. That is the whole trick, and it is verifiable: every number above comes off a published panel, not an ad.
